A lot of other things seem like they're referencing something specific, but I don't have enough encyclopedic knowledge to say for sure, especially since I still don't know much about the Holostars crew.
I'm sure those eyes are supposed to be hollow or "nonorganic" like a statue would look?
Might be. Not 'hollow' though. She shares eye style with Eiki, who also used to be a Jizo statue, so it may be related to their eyes being metaphorically (or literally) shaded by the straw hats that jizo statues are often seen with. Conversely, Mayumi is based off of a different type of statue (an actually hollow one), and Chamaji gives her empty black eyes.

Well it wasn't the shade under the hat I was focused on, but I get it.
Oddly enough, by chance, I was just watching an old British sitcom The Detectives where an episode * ended with them being officially permitted to voyeur in the British National Hockey team [ if there is such a thing ] dressing rooms where a set of bathing and be-toweled young lovelies unaware of being spied upon, gave a rousing rendition of Swing Low, Sweet Chariot.
