I don't know where you got that impression from at all. Eagle Claw Fist would probably the best "official" name there could be for it. Other than that claw pose is the best simple name.

mid-closed hand could be any number of things, and clawing hand seems to imply something is being clawed, rather than any kind of pose.

The idea of "fingers are claws" is strong here, though, so clawing hand, claw pose, etc, have a point.

Not really. Just reminds me of a fighting stance, which is where you usually see this kind of thing. If we want to be really specific I guess you could just say "Claw_finger_pose" but I think claw pose is more to the point.

Clawing hand is a little better, I guess, but still seems a little too vague for me.
