(Usually because shitty hands [at least, the kind that rely on middle tiles] are flexible, which allow you to improve your hand or win off a wide variety of tiles. This lets you tsumo very easily, and makes your riichi very deadly. Doing it too much can be predictable though.)

Well, he is a master. Almost all the high-yaku hands are luck-based. I can't count the amount of times that I've pulled a game off using tanyaos or toitois (at the last moment). But still, I like to call single yakus shitty. The hand isn't but the yaku sure can be. Without dora, this hand wouldn't be that great; plus you can often tell if someone's going for a hand that uses them... but then again, as a master, he can probably do subterfuge up the wazoo.
Pros don't riichi that much, though. You lose too much flex for a single extra yaku. Better to keep your options open, unless it's a situation where that one extra yaku really counts.
