Might taste okay, but it's neither borscht nor pasta.
Now, making a borscht-style sauce (instead of straight-up borscht soup) and pairing it with fettuccine or campanelle (basically choose thick/flat/wavy pasta instead of something thin like spaghetti), remembering to (IMPORTANT!) finish cooking the pasta in the sauce in the end... and probably roasting the beets before cooking for good measure... that'd taste heavenly.
If it tastes good, it's fine, no?
