I don't get while Yamakaze is so popular. Isn't she like a moody and needy girl?
For the same reason that "Imouto" characters are so ridiculously popular. In fact, most artists that like her pretty much immediately declared her their little sister. (Although she's not listed in any way as a relation to the main character, so it's not something that annoys me nearly as much...)
Basically, it's for guys who want to feel like a "big man" by protecting a weak little girl. (More emotionally weak than physically in this case.) She's basically the absolute epitome of the sensitive, easily-bullied girl, so either she attracts bullies or guys that want to protect girls from bullies like flies to potato salad.
... Not that such an impulse is the worst thing, mind you. Certainly better than all the rape and humiliation fetishism. And Hell, I'd have trouble holding back from headpats if a real-life Yamakaze was near me.

When you put it that way I guess it makes a lot of sense. Although Sylvie didn't do much for me. In part because the game was super repetitive if you didn't do the ero stuff constantly. I can definitely see her as someone part of a family, but not so much as a romantic partner. Someone you took under your wing to protect and raise, but not so much as a wife.

The other issue for me is that being dependent on is fun for a while, but it gets tiring fast when your entire life revolves around a single person. I guess that is the kind of relationship a lot of people dream of though when they imagine "true love" though. I think the best kind of grill are the ones that are kind of like a tsundere, but not so much embarrassed as she is calculating. She would make you work hard for her affection for a long time to test you, but knows how to be provacative enough to motivate you and not be bitchy, and once you finally get her affection you got her for life so long as you don't show infidelity or treat her differently than when you courted her. Kind of like where she knows when to be submissive and cute, but she isn't doing it against her will or due to being carried by the emotional circumstances, and she knows what she is looking for.

Well, it's one of those Japanese things that "cute" and "sexy" often get weirdly intertwined. I personally keep my "would like to have as a daughter," "would like to have as a sister," and "would want to be my wife," lists quite separate. (I'm not all that fond of destroyer porn in general, really...)
As someone who's actually known girls with personalities somewhat (but not nearly as severe) as this, yeah, it can make you rather anxious. It's like being a giant creeping through a room full of fragile, precariously positioned things, you just feel like you're going to break something the instant you relax a little bit. The worst part is that lingering guilt when you know that whatever you say will fly because they won't contradict you, and they're too meek to voice what they want, themselves, so you have to play the guessing game as to what they actually wanted and act like it was your idea. If you don't, you just feel like an oaf who took advantage of someone who couldn't speak up for themselves. (And if you make it obvious you're going out of your way to find out what she wants, then she starts feeling guilty and apologizing for taking up your time...)
I also lean towards the tsundere end of the spectrum for that reason: Someone who will simply yell at me when I'm doing something wrong is someone who I don't have to play the guessing game of why she's sulking with, and there's no fun in teasing someone who won't tease back. (That said, deadpan snarker iincho with glasses is still the best.)
You totally get me friend! You are right about being upfront about complaints. Nothing is more annoying than someone holding a grudge against you for something you didn't even know you were doing wrong.
