Dead or Alive Dimensions was a better game than anything released in that series after 2. DOAX Paradise was bad, but the DOAX series was apparently never meant to be anything but shit (1 had promise, 2 managed to IMMEDIATELY run that promise into the ground). At least graphically, DOA5 gets more accomplished than the series has managed in about a decade. (yes, it's been over a decade since 2) I'm definitely taking a "wait and see" approach.

Ultimate, 3, and 4 were not better than 2? Did the PS2 jagged graphics and lack of online make it better? That's your opinion.
PS: Ultimate was a remake of 2, which was wayyy better, IMO.

Sadly, I never got any real playtime with that version. I bought the game at release along with a Dreamcast to play it on, so I didn't money for a PS2 until long after DOA 3 came out, so I never really got into "DOA2: Hardcore".
Ultimate was awesome, but what kind of hurt that game for me was that it still had the rather absurd levels of counter damage. It did, however, introduce a separate counter motion for medium kicks, which in all honesty helped Helena's game TREMENDOUSLY, at least for intermediate players.
I think what bothered me about DOA, post 2, was how little love the tag mode got. It was undoubtedly the deepest branch in the DOA experience, and it got all but ZERO dev time in terms of stages. 4 REALLY should have at least had all the stages from 3, but instead they decided to cap it off at the 3 new ones they made, one of which was ANOTHER fucking danger zone.
