Out of curiosity, was there a specific submarine that was somehow more important than the others around the middle Solomons that this event represents, or is it just a generic submarine princess?

In what way? The conning tower SS Hime has actually matches that of multiple Japanese classes of submarines like the Type C and Type A models. Of course the only real way of figuring out her identity is to find out which submarine got sunk near Sri Lanka, as that is the location where you fight her.
