Sorry for only responding after three months, Zero. There's a lot of material that didn't make it into the anime, and was published afterwards in things like books and drama CDs.
And now I'll be depressed for another few days, brooding over how I'll never get to see these chapters animated. :'(

I just recently found that out as well to be exact there were two mangas and one novel along with two audio drama CDs including soil summons for hades, alexander, knights of the round, tri-disaster, raiden, and anima. I'm sure a Great deal of fans of final fantasy unlimited (myself included) would love to see atleast an OVA sequal for it if it's not too much. the mangas were Final Fantasy Unlimited Before which cronicles the events of kaze and madoushi's homes being destroyed, Final Fantasy Unlimited After cronicling the events after the anime where a new villan under the rule of gaudium appears and takes over wonderland. the wiki site for final fantasy has the mythos for most of the FFU Before summons cept for anima hades and alexander though no images for the soil versions of each summon
As far as I know, there was only one novel (Sou no Kizuna) and it takes place between episodes 13 and 14 or so in the series. Also, there was never a manga to my knowledge. Have a look at the Legacy section on Wikipedia's article – I have a copy of each of those (and essentially wrote that section). According to a Japanese friend, those are the only other components of the FF:U franchise.
I really ought to make a point of translating the After fragments and put them all nicely together on a site or something. But yeah, what would really make my day is a continuation of the anime.
