I thought it was called Grim Reaper or Shinigami? I think Yorktown mentioned it before passing it to enterprise. A reference to the Fighting Squadron 10.
He has no name and doesn't represent any specific squadron. His entire existence is to be a symbolic passing of the torch from Yorktown to Enterprise. Maybe we should just call him Eagle-kun or Enterprise's Eagle, I'm not sure.

Yorktown calls it 小鹰 (xiǎoyīng, "little eagle") in Chinese, and いーぐるちゃん (Eagle-chan, with "eagle" in hiragana-transcribed English) in Japanese. Not necessarily a definite name (like "kitty" or "doggy"), but Japanese promotional materials (usually involving Enterprise, and posted on the Japanese twitter page) consistently calls it いーぐるちゃん.
I'd translate it as some sort of diminutive of "eagle", like "Eggy" or "Eagie". "Eddie" might be stretching it too much.

The name is a reference to VF-10 of WW2 and the reason Yorktown passes him to Enterprise is because the first CO of VF-10 was James H. Flatley, XO of VF-42 which was embarked on Yorktown until after Midway when it was disbanded.
