I imagine it's more that they want to try a sample of each kind... but since they all look the same, they can't tell them apart. Nor could you say, "Oh, the X is really good!" if you can't tell which one it is...
Pheasant is DELICIOUS. Love them little birds. Boar is OK. Deer is pretty good. Duck is kinda greasy. There's a wild game restaurant in my downtown with those sorts of meats. They used to have antelope but I never got to try it.
If anyone was raised in a family who likes to hunt it wouldn't be that hard to recognize bear meat. It's usually black and tough, while deer meat I think is a little juicy, but tends to have a somewhat medium texture to it when prepared (I may be wrong...it's been a while since I had deer). As for pheasant or wild boar, sorry, that stuff isn't local to WV. I'd like to try it though.
